The Department of Clinical Nutrition is made up of faculty dedicated to providing high quality education in the field of nutrition and dietetics. Degree programs are available for current licensed health care professionals and individuals seeking the registered dietitian credential.
The study of nutrition and its effects on health includes:
- an understanding of the chemical and functional components of food
- physiological effects of food components
- knowledge of how human behavior affects food choices
- impact of the surrounding environment on food choices
Students enrolled in the Master of Clinical Nutrition degree programs will study nutrition through the life cycle, from birth to advanced age. Students will also study the role of nutrition in the causes and treatment of a variety of medical conditions.
Graduates find positions in both acute and ambulatory care settings such as cardiac rehabilitation, renal dialysis, diabetes, pediatrics, nutrition support, cancer, trauma, wellness centers, and community based intervention programs.
Faculty are directly involved with patient care clinics within the university hospitals and clinics and collaborative research endeavors through the Center for Human Nutrition and/or other campus departments. Obesity prevention through community outreach is a primary initiative involving the expertise of multiple departments.
